Lately I’ve been playing around with eating less and less meat. I started decreasing my meat intake in October and since the beginning of January I’ve been completely meat free. I have been a lifetime skeptic of the vegetarian lifestyle, but after some consideration I decided to give it a try and I have absolutely loved it so far!
Now, let’s be clear. I’m not recommending a vegetarian diet. I’m not saying that vegetarian is the best diet. I am simply saying that I have decided (for myself) that eating less meat makes me feel better. I don’t consider myself a vegetarian (yet). However, I do love healthy delicious vegetarian recipes.
So, let me share this one with you! I found this recipe in The magazine The Vegetarian Times.
It’s a delicious mixture of white rice, broccoli florets, baby peas, red bell pepper, green onions, cherry tomatoes, and black and green olives sprinkles with some lemon. It really is delicious!
I chose this recipe because it contains plenty of carbs. Since I’m training for my next marathon, I tend to be in need of a few more carbs throughout the week.
After you prepare your veggies, most of the work is done! The recipe only takes about 30 minutes to prepare so it’s quick and easy! Plus, this recipe makes about 6 servings so if you live alone you can eat this for quite a few meals!
I decided to make a vegetarian option, but you could certainly add shrimp, fish, or chicken to this dish to satisfy your inner meat lover.
