Happy Hump Day!
Goodness, it’s been a crazy week already! I feel like all I’ve been doing is running around like a crazy person for the past few days.
In order to maintain a little bit of order through the hustle and bustle of everyday life, I decided to prepare my meals in advance this week. Today I’ll share with you a delicious and healthy Stuffed Red Bell Pepper Recipe. Once again, it’s a vegetarian dish, but adding lean ground beef to this recipe would also be amazing! With the left over filling of the Stuffed Red Pepper Recipe, you can also make delicious and filling vegetarian quesadillas! #yummo
If you are “making it ahead” I recommend wrapping each individual pepper in plastic wrap so that it easy to grab them and go! 🙂

Quinoa Quesadilla Recipe
For some reason, I had left over stuffing (maybe my peppers were too small). Instead of tossing it, I decided to make some quinoa mozzarella black bean quesadillas! I ate one for lunch today and it was delicious!
If you are reheating it later, you can reheat it in a skillet or nuke it in the microwave. Microwave time is 2 mins on high.
